Variations

Most of our recipes are very versatile and flexible and allow you to make a multitude of variations of recipes from them. Listed below are some examples.

Brownies

These brownies are made with an extra dark chocolate which causes the dark color. I sometimes swirl in a bit of softened whipped cream cheese or sprinkle some walnuts or chocolate chips across the top for a delicious and surprising addition.

Cookies

Our basic cookie dough can be worked into most any cookie that you crave by simply adding ingredients at the end of the mixing process. Here are a few ideas:

  • Chocolate chips (or any other type of sweet chip)
  • A ½ cup of oatmeal, cinnamon and raisins for oatmeal raisincookies
  • Shredded carrots, cinnamon and raisins for carrot cookies
  • ½ to 1 cup of peanut butter, or any other type of nut butterfor nutty cookies. Add in a handful of nuts too for an even crunchiercookie!

Muffins

I love this muffin mix and two of my favorite muffins to make are blueberry and pumpkin. You can also make carrot, cinnamon swirl, apple and more.

  • Fruit muffins - Simply add your cut up or small fruit pieces, your spices if called for such as cinnamon for apple, nutmeg and cinnamon for carrot to the dough and mix in last. When using fresh fruit please add cooking time due to increased moisture in mix.
  • Sweet cravings muffins – Toss in some chocolate chips, nuts,toffee pieces or even swirl in melted chocolate if you’d like.There many ways to take your breakfast muffin and make it into a deliciousmidnight snack attack sweet treat. For a cinnamon swirl muffin if youdon’t have time for the cinnamon rolls then add half of your muffin dough to the muffin cup, toss in a pinch of cinnamon, tab of butter and sprinkle on some brown sugar. Then add the last half of dough. You can top it with the same and you will have mini cinnamon swirl delights!
  • Savory muffins – For that savory craving simply add in any of your favorite cut up cooked meats or veggies. Make sure that they are in small enough pieces that they don’t dominate the dough and spice it up with a bit of spices if you’d like. You can even put in half of the dough first and then add a small bit of cheese and sausage and plot the last half of dough on next for a wonderful lunchtime quick bite.

Substitutions

Each of our recipes was developed with the ability to exchange ingredients out based on allergy issues. Please note the following substitutions:

Butter

Replace as called for with either: soy margarine, margarine, vegetable margarine or even coconut oil (our personal favorite). Although instructions for coconut oil note that it isn’t the best for cookies we have found it to work extremely well with our cookie mix. Simply melt the coconut oil (if it has emulsified) before using. A direct measurement substitution can be made.

Dairy

Replace as called for in the recipe with the substitution of your choice. All of these recipes have been tested using rice, soy, coconut, milk and hemp milks.

Eggs

Use ¼ cup applesauce for each egg called for. You can also use an egg replacer and please follow the packaging instructions per manufacturer. Do not use applesauce as an egg-replacer in the brownie mix. For the chocolate cake mix a flax seed meal works best. For best results mix 1 Tb ground flax meal with 3 Tb hot water and let sit until gelled before using. This will equal 1 large egg.
